Recently I went to the ikea to look for a new closet. I didn’t find what I was looking for, but I did had a great dinner together with mum.
Did you know IKEA offers more and more vegan options? I read about it, and was curious to know if the IKEA here had this too.
What did I want to try?
I like the fact that IKEA spotted the need for Vegan food, and made an effort into putting a vegan option on their menu. Of course I tried the “meatballs”. You could see all the veggies in it, it has multiple colours. The waitress in the restaurant asked me if I wanted fries or couscous, and I chose couscous.
This was what it looked like. A plate full of fresh vegan food.
But, did it taste good?!
Yes, it did! They weren’t soaky like the ones I made. They were a bit crispy and a little bit fat. They bake them in oil. The couscous was also good; filled up with beans. I definitely be back for this.
IKEA well done! You’re making a step in the right direction by adding this to your menu. I liked it and will be back for this.
I discovered something new. And I’m so happy I found it. Or better said, them. Do you all know the concept of a dinner club? You go to a location, people cook for you and you pay/or give something in return? (I also made a vlog about my day worth of food)
Well, today I discovered a vegan dinner club, in the middle of Amsterdam. I didn’t knew what to expect, and I hoped I’ll get some tasty food.
I got a really really nice, nutritional and healthy meals! It cost 6 euro, but this was what I got:
In the cup is lemonade, freshly made. The yellow substance in the little bowl was Dahl soup. The orange sauce on the left was a mango chutney. Then there was rice with cashews, and a salad made of papaya, kale and other veggies. And finally the green stuff on the right was spinach with chickpeas and lentils. Later I got a dessert, a small piece of a cranberry cake, with maple syrup on top.
It was so great to eat with like minded people. They understood me as a vegan, I didn’t have to ask if the cake was made with butter. They all talked about how they knew we could change the world, person by person, by becoming vegan.
I loved it, and I will definitely be back.

Like everyone else I made a resolution this year, to eat more healthy. Did I manage to do that? A bit.

-180 gram (soy) yoghurt
– 1 Apple
– 2 tbsp maple syrup
– 2 tbsp chia seed
– 1 kiwi
– a jar
How to make:
Cut your apple into small pieces. But them at the bottom of your jar. Fill your jar up with yoghurt. Then put the maple syrup in, and sprinkle the seeds on. Cut the kiwi and finish it off with the kiwi in top. Enjoy!
Start your day healthy with this breakfast. And you can take it with you, it’s in a jar and easy to bring with you.
Last week I was hungry all day. I snacked on fruit but it wasn’t satisfying me. I wanted something crunchy, something nice. So I made kale chips, for the first time in my life.
It was so easy and so tasty, that I want to give you all the recipe for this amazing snack!
– kale leafs
– paprika powder
– oil (optional, I didn’t use it)
Preheat your oven on 200°. Pick a tray and put some paper on it.
Cut the kale into eat able pieces.
Season them with herbs, you can also use garlic powder or basil.
Put it all in the oven for about 8 minutes, check if they are crispy. Of they aren’t then put them back for 4 more minutes.
It’s ‘s easy and ready under 15 minutes. I love to bring them to the cinema, or serve them when I have friends over. It’s my favourite new snack.
Already day 2. I survived day 1, it went pretty well. Did had a light headache bit that’s also due to the cold I had to face outside. It was freezing and I wasn’t wearing a hat. My fault. I also made a video about yesterday, it’s here. I tell about the juices and drink one in the bus.

But I wasn’t feeling that good. I was hungry all day. At the end of the afternoon I are one apple. I just had to. I’m not feeling guilty. I also baked cookies out of the leftover pulp from my juices. If I feel like I need to eat, I can eat that. At least it’s healthy. This is the video about today.
A lot of people told me today that I looked pale. I wasn’t wearing make up, but maybe it’s because of the detox. I felt tired and I wasn’t that happy. I think it’s also because I wanted to eat the sushi my mum got. I’m still determined to continue. Let’s see what tomorrow will bring me!
Tonight I had dinner at a friends house. He knows I’m a vegan, and he wanted to make dinner together. We decided to make tapas! Why tapas? Well because I like eating and this way you can eat a lot of different things. It’s also easy for him, because I’m the only vegan tonight. Not everyone wants to eat the way I do. I respect that, so eating tapas is a great idea. This is what we made;

– peppers filled with mushrooms, spring onions and spinach
– corn/kidney bean salad with cherry tomatoes
– salad with cucumber, green pepper and spinach
– filled eggs (not vegan)
– dates with pieces of banana’s inside
– no-tuna-tuna salad
And today I’ll give you the recipe for the bruschetta.
– bread (I like Turkish bread)
How to make
Preheat the oven at 200° . Then cut the tomatoes, you’ll only need the outside, the ‘hard’ part.
Cut your bread and put it in the oven for about 5 minutes.
Then cut the ‘hard’ part of the tomato in small dices. Throw away the wet inside.
Cut garlic into very,very tiny pieces, and do the same with the garlic. Put the garlic,basil and tomatoes in a bowl together with the olive oil. Mix it well.
Take your bread out and put some tomato salsa on top. Voila!
It’s an easy yet delicious recipe. I like to make it as an appetizer, or eat it as my lunch. You’ll always score with this one.
I love to eat with my friends. But like I said in my last post, it can be hard to eat out. Another way to avoid that could be eating at home. That’s what I did yesterday, I invited a friend and together we cooked a delicious dinner!
We made a few dishes; at first we made zuchinni soup. After that we had a zuchinni pasta and a salad.
I made the pasta for the second time, it’s still a succes!
The recipe for the soup;
– 4 zuchinni’s
– vegetable stock
– 2 onions
– some garlic
– around 600 ml water
Cut the onion and the garlic and put them in a big pot. Let them cook, and cut the zuchinni in little dices.
Put them in the pot, and cook for 10 minutes. Then put the water and the stock in. Cook for 20 minutes, then blend the zuchinni until you get a creamy texture. And your soup is done!
It was nice to make a meal together; and it was fun that my friend liked my vegan food! That’s a good goal right? Eating at home can be the solution if you’re scared to dine out, or just want to save money.

Here are my favorite, delicious and healthy breakfast ideas!
1. Soy yogurt with home made cruesli. This is one od my favourite quick breakfast ideas, I make the cruesli the day before and I only have to put it in a bowl with some yogurt. But still, a delicious idea.
2. Overnight oats. You have to make this one the night before, the oats have to sulk in all the almond milk (or soy milk) you put in. It’s really good with some extra maple syrup.
3. Baked oats with chopped apple cinnamon. I live to eat this in the winter. Somehow it reminds me of eating apple pie. It takes a bit more time; you need to peel and chop the apples and then cook it with (soy) milk,cinnamon and oats.
4. Pancakes. I make my pancakes with almond milk and bananas instead of milk and eggs. (One large banana for 2 eggs) It takes some time,but it’s great for the weekend. It really feels like a Sunday brunch.
5. Rice crackers with hummus, tomatoes and cucumber. I eat this whenever we run out of oats or almond milk. It good, easy but it’s a bit like comfort food.

I made a berrylicious smoothie today. It was a lot, but really good!
I needed a big smoothie; there was so much wind today, the wind almost blew me of my bike.
But it was a good workout. 😉
For dinner I made these peppers;
– 4 pointed peppers
– spring onions
Cut the peppers in half. Pre-heat the oven at 170 degrees.
Cut the mushrooms,tofu and onions and sauteed the onions,tofu and mushrooms. Bake the spinach for 2 minutes.
Fill the paprika’s up with the onions,tofu,spinach and mushrooms.
Put them in the oven for 24 minutes.
Put them out, and enjoy!
I found it very delicious! I love my peppers.
Today was a busy day. I got myself a new cellphone, so I’m really happy now. Took some time to install everything, but he looks great. I had to do tons of other stuff, so cooking was not something I could spent my time on. So I just made this very easy but delicious couscous. I put some things together and it turned out fine!
That’s why I wanted to share it with you guys. 🙂
I came up with the idea because I had a lack of time to make something better. I found some veggies in de fridge, and thought about making a salad. Then I remembered the couscous my mum recently bought. I finished it in 5/10 minutes, luckily, ’cause I had a movienight planned with my dad and we already bought or cinematickets. There I sat, watching “Dying of the Light” with my couscous.
– 85 gram couscous
– around 1 cucumber
– red bell peper
– 1/2 lemon
– olive oil
– some nuts (I didn’t put a lot in it, I think make 6 nuts in total)
Cook some water, and add some salt and oil. When your water is boiling, turn the water off and put the couscous in.
Let them soak for about 3 minutes.
Then turn the gas on, and cook for another 3 minutes, then set it apart to cool down.
Take the skin of the cucumber and cut it together with the pepper and nuts.
Mix it with the couscous, put lemon over it and some mint on top.
