Remember my post about my cold feet yesterday? I should have known, haha. I was cold all day yesterday and today, and I didn’t knew why.
Untill 3 o’clock. I felt horrible, I had stomachpain and threw up.
I’m feeling a bit sick now.
I know that a lot of people have the flu, which is strange ’cause it’s already spring and almost april! Shouldn’t that be over now?
I also always thought that all of the RT4/vegan people had an amazing immune system, but clearly not, haha.
Thank God I have the best mum, ’cause she made me this amazing soup. This is currently my state of mind:
I call it; ‘Bored and feeling like crap’. Hooray.
A delicious vegan soup, with a lot of veggies! She really put everything in it. If this isn’t gonna make me better, what will?
At least I’m getting all my vitamins in. 🙂

I’ve made this soup a couple times, and it’s a success every tume I serve it. It is easy to make, and, most important, very good! It’s vegan proof!
- 1 large pumpkin (I don’t know the good translation, in Dutch we call them ‘flespompoen”a rough translation is ‘bottlepumpkin’ maybe someone ones what I mean?)
- 2 carrots
- 2 small onions
- herbs (like thyme,basil,persley)
- veggie stock
- 800 ml water
- salt and pepper
- vegan cheese (non-vegan: parmezan cheese)
You start with the cutting. Cut your pumpkin into half, and remove all the seeds on the inside. Then cut it into smaller pieces. Also cut the onions, the carrots and the herbs.
Boil (in a large pan) the water, and put the vegetable stock in when it starts boiling. Stir a bit and keep it on the stove for about five minutes. Then add all the veggies, and season it with salt and pepper,
Let it cook on the stove for about 30 minutes. You do need to stir sometimes, And don’t forget to taste!
When it already tastes delicious, start mxing it up. We have a special kind of mixer for it. You need to make sure that all of your veggies are completely ‘gone’ and part of the soup. When you start mixing, you will see the soup get thicker and thicker. Cook it for another ten minutes after the mixing.
Take it off the stove and put the vegan chese in. I like to stir it, so the cheese isn’t only on top, but althrough the soup. If you did it the same way I did, this will be your result! Enjoy!
Yesterday was really nice! I went out for dinner with my best friend, we ate sushi. I LOVE SUSHI. More then every other food in the world. I love the texture, the taste, the looks. Haha, I’m going crazy on sushi, but it just seems to give me energy. Today was a active day for me, but it feels really good. I went for a bikeride from 1.5 hour, and I ran for about an hour. Today I worked, and at work I drank a blackbery-cucumber smoothie. Everybody at work are talking about me, behind my back. Because of my RT4 lifestyle. I thought I didn’t care, I feel good about it. But it does hurt. Don’t they see I’m doing the good thing? Living a healthy life? Don’t they want to feel the same good way I’m feeling?! I’m happy that my boyfriend is supportive. He isn’t eating the same way, but he helps me and he never complains whenever we eat vegan or vegetarian. AND he loves sushi too ^^.

Breakfast: 4 banana’s
Lunch: veggie soup and 3 banana’s
Snack: blackberry cucumber smoothie

how are you guys doing today? I’m fine, I’ve worked from 7.00-18.00 so I had a long day. I should feel tired, but I don’t. Maybe a bit, but if you think about the long day I made… I’m happy that I feel so well. I had an amazing dinner, thanks to a recipe from purplehouseblog. The soup was perfect, I even made extra for tomorrow.

Lunch: salad with tofu chicken (did taste good, though)
Dinner: home-made soup from and it was delicious!
Snack: mushrooms and 4 ricecrackers
